Fried pizza is a product that comes from the alleys of Naples. The dough is the same as the classic Neapolitan pizza cooked in a wood oven. However, the method of cooking is different. Our pizza is fried in oil in large metal containers called a “Faysal.”
Tradition has it that in the “skid row” the kitchens are open on the alley and people would instantly stop to enjoy the fried pizza. DON wanted to recapture and reproduce this method in all of its simplicity to its original size.
